CAROLINA SLAW






CAROLINA SLAW –– a MUST HAVE for Q’ Parties

- 2 tablespoons red wine vinegar
- 2 tblspoons lemon juice
- ½ cup white sugar
- 2 tblspoons Worcestershire
- 1/3 cup spicy mustard (I use a horseradish mustard)
- 1 cup mayonnaise
- 1 teaspoon Tabasco (Franks red hot)
- 2 tblspoons ketchup
- 2 teaspoons salt
- 2 cups vegetable oil
- 1 head green cabbage
- 1/4 head red cabbage (approx.)
- ¼ cup diced red onion
- ½ cup shredded carrots

***TYW TIP** - a FOOD PROCESSOR really makes the prep easier and quicker

Using electric mixer --COMBINE vinegar and sugar in bowl.  Stir until sugar dissolved.  Add lemon juice and Worcestershire and beat to blend together.  Add mustard, mayo, Tabasco (red hot), ketchup and salt.  Beat lightly.

POUR (slowly) in oil with mixer RUNNING to form a thick dressing.  Cover/chill  until ready to use.

OK…now the tedious prep.  Remove outer leaves of cabbage.  Core and slice into thin slices (we use food processor).  Thinly slice red cabbage and add to green cabbage.  Add red onion and carrots and toss to mix.

NOW…when you are READY TO SERVE.  MIX dressing and cabbage.  Both can be chilled before combining.  Be sure cabbage is fairly dry – so oil holds.

This is EVEN BETTER the next day with leftover Q’ for SAMMIES!!
