"The Cleats” World Famous Jalapenos
Ingredients:
40 Jalapenos (Medium Sized)
1 Package Bacon
Package of Cream Cheese
1 Package Grated Cheddar
Cut the tops off all the Jalapenos
Core the Jalapenos (Williams Sonoma has a great corer
for $9 )
Throw in a large bowl of cold water- This helps to loosen
some of those nasty little seeds in the bottoms of the jalapenos. Soaking also
helps to lessen the effects of capsaicin. You can soak these up to 24 hours but
some may split during this process.
Dump the water (Or drink it) and dry on paper towels.
Put a little of the grated cheddar in the bottom and fill
the rest with cream cheese. Cheddar tends to melt over the top and ruin the
bacon. The cream cheese on top prevents this from happening.
Cut your pack of bacon in half, this usually produces
between 36-40 pieces of bacon.
I like to use the 12 inch bamboo skewers, wrap a half piece
of bacon around each jalapeno and secure the end with the skewer,
I set up the Big Green Egg for indirect cooking at 375 degrees
and add a rack so the jalapenos are above the grill grate. I like to use a mix of Jack Daniels wood
chips and some cherry for flavor.
Cook time is from 45-60 minutes
Try to save some for the guests
